When using Quest 3’s new Touch Plus controllers or last year’s Touch Pro controllers (which come with Quest Pro and are compatible with Quest 2 and 3) SteamVR has until now shown Quest 2’s Touch controllers. The new beta update adds models for each.
Right now this only works with Link and Air Link, but Touch Plus should also appear with Virtual Desktop after its next update.
I noticed this a couple days ago. It makes me so happy. I specifically requested this about 1 months after the Quest Pro launched (so November '22, a year ago) on the steamVR feature request subforum. And then again when the Quest 3 came out. I pointed out that Meta had meshes within the Oculus software that could likely be used, depending on licensing.
