I think the hybrid Crosstrek is their only option for that and it’s bloody expensive. One of my friends bought a Ford Maverick (pickup) hybrid, and the damn thing gets 10 better mpg than a Subaru Outback…

You’ll really drive it long enough for it to make sense. I’ve done the math on several different models and assuming your drive as much as the typical American it can take 10+ years.
