Want small SSD for / and programs, larger one for /home so I can easily reinstall/upgrade, with the HDD as data backup. I have my own cloud on my hosted server for stuff. Want mini for portability between places, but sick of laptop and neck issues, want a nice keyboard and mouse,

Gpu you don’t really need I suppose. So igpu would be sufficient. Maybe ideally with a fast amd 7040 series cpu and ddr5 would be blazing fast. Together with a fast m2 ssd indeed.

What about your screen? Especially how do you bring that on eye level?
