I made some polenta not too long ago and I was surprised the recipe specifically called for olive oil. Worked out, anyhow.
I don’t want to relitigate the struggle session (I actually do) but olive oil is fine for frying
Worked great for my polenta fritters for sure. I need to make more sometime.
